I first met Pascal Le Borgne on a Concorde flight between New York and Paris at the end of the 1990’s. We have kept in close contact ever since. Pascal is a loyal customer of my restaurants around the world, and through the activities of Apanage, we work together on the creation of sumptuous private dinners in magical locations.
